Bacon and Cheese Crustless Quiche or Muffins are an easy go-to for those who are too busy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serves: 8<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Ingredients<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><em>4 large eggs<\/em><\/li>\n\n\n\n<li><em>2 cups crumbled bacon, cooked and drained<\/em><\/li>\n\n\n\n<li><em>3 plum tomatoes, diced<\/em><\/li>\n\n\n\n<li><em>1 large onion, diced<\/em><\/li>\n\n\n\n<li><em>2 tablespoons butter<\/em><\/li>\n\n\n\n<li><em>1 \u00bd cups heavy whipping cream<\/em><\/li>\n\n\n\n<li><em>1 cup shredded cheddar cheese<\/em><\/li>\n\n\n\n<li><em>\u00bc cup grated Parmesan cheese<\/em><\/li>\n\n\n\n<li><em>\u00bc teaspoon salt<\/em><\/li>\n\n\n\n<li><em>\u215b teaspoon black pepper<\/em><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Method<\/em><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><em>Preheat oven to 350\u00b0 Fahrenheit\/180\u00b0 Celsius.<\/em><\/li>\n\n\n\n<li><em>Mix eggs, whipping cream, salt, and pepper together in one bowl and set aside.<\/em><\/li>\n\n\n\n<li><em>In a large skillet, heat 2 Tablespoons butter and saut\u00e9 the onion and plum tomatoes until tender.<\/em><\/li>\n\n\n\n<li><em>Remove the onion\/tomato and set aside<\/em><\/li>\n\n\n\n<li><em>In the same skillet, fry bacon until lightly browned and add to the onions, tomatoes.<\/em><\/li>\n\n\n\n<li><em>Add half of the Parmesan and cheddar cheese to the bacon, onion and tomato mixture and stir thoroughly.<\/em><\/li>\n\n\n\n<li><em>Mix in the egg and cream mixture and stir thoroughly.<\/em><\/li>\n\n\n\n<li><em>Pour this mixture into<\/em> a greased pie, quiche baking pan,<em> or muffin cups.<\/em><\/li>\n\n\n\n<li><em>Top with remaining cheese and bake for 35 minutes or until quiche is set.<\/em><\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">You can double up on the ingredients, and make them ahead of time, they freeze and refridgerate well.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"510\" height=\"154\" src=\"https:\/\/thewolfslair.online\/cms\/wp-content\/uploads\/2025\/07\/image.png\" alt=\"\" class=\"wp-image-210\" srcset=\"https:\/\/thewolfslair.online\/cms\/wp-content\/uploads\/2025\/07\/image.png 510w, https:\/\/thewolfslair.online\/cms\/wp-content\/uploads\/2025\/07\/image-300x91.png 300w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/figure>\n","protected":false},"excerpt":{"rendered":"<p>Are you looking for a quick and easy snack or school lunch?
