Ingredients
- 4 large eggs
- 2 cups crumbled bacon, cooked and drained
- 3 plum tomatoes, diced
- 1 large onion, diced
- 2 tablespoons butter
- 1 ½ cups heavy whipping cream
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- ¼ teaspoon salt
- â…› teaspoon black pepper
Method
- Preheat oven to 350° Fahrenheit/180° Celsius.
- Mix eggs, whipping cream, salt, and pepper together in one bowl and set aside.
- In a large skillet, heat 2 Tablespoons butter and sauté the onion and plum tomatoes until tender.
- Remove the onion/tomato and set aside
- In the same skillet, fry bacon until lightly browned and add to the onions, tomatoes.
- Add half of the Parmesan and cheddar cheese to the bacon, onion and tomato mixture and stir thoroughly.
- Mix in the egg and cream mixture and stir thoroughly.
- Pour this mixture into a greased pie, quiche baking pan, or muffin cups.
- Top with remaining cheese and bake for 35 minutes or until quiche is set.
You can double up on the ingredients, and make them ahead of time, they freeze and refridgerate well.
